Choose the defer option. If you get an offer for entry that year and then request to defer, the universities may choose not to grant you deferment since you didn't specify you need a deferred offer from the start. Generally, deferred offers tend to be harder to get because unis need to be assured that you'll still be deserving of an offer in the next cycle, but they're not unheard of either.
I got into some of the schools you listed back in the 2010/ 2011 UCAS cycle. I had 4 H2 As but my offers only required 3 (I think Kings asks for 4 though?) My LNAT score was 26 I think (bearing in mind that the average has gone up over the years - in my year, it was something like 17/18 out of 42 but it's 20+ now I think)
